Name Spicy Parmesan Green Beans and Kale

List of Ingredients 1 T olive oil

1 onion, sliced

1/4 lb. oyster mushrooms, trimmed and cut into bite-size pieces

1 1/2 lb.s green beans, trimmed and sliced into 1-inch pieces

2 tsp. salt

1/2 tsp. freshly ground black pepper

1/4 cup white wine

1/4 tsp. red pepper flakes

1 bunch kale (1/2 lb.), rinsed, stemmed and roughly chopped

2 T lemon juice (about 1/2 lemon)

3 T finely grated Parmesan
Description Warm olive oil in large, heavy saute pan over medium-high heat.  Add onions and cook until translucent, about 4 minutes.  Add mushrooms, green beans, salt and pepper and cook for 2 minutes.  Add wine and continue cooking until the green beans are almost tender, about 5 minutes.  Add red pepper flakes and kale and continue cooking until the kale has wilted, about 4 to 5 minutes.  Add lemon juice and Parmesan and toss to coat.
