Name Asian Chicken Lettuce Wraps

List of Ingredients 1 lb. chicken tenders, cut crosswise into 1-inch pieces

10 oz. bag shredded carrots

1/3 cup jarred chili-garlic sauce

1 bunch scallions, chopped

1/2 cup fresh cilantro leaves, coarsely chopped

8 large Boston lettuce

8 lime wedges
Description To make the filling, spray a large nonstick skillet with nonstick spray and set over medium-high heat.  Add the chicken and carrots; cook, stirring occasionally, until the chicken is cooked through, 5 to 6 minutes.  Stir in the chili sauce and scallions; cook, stirring frequently, until heated through, about 1 minutes.  Remove the skillet from the heat and stir in the cilantro.



Place 2 lettuce leaves on each of 4 plates.  Place 1/2 cup filling on each leaf, squeeze the juice from 1 lime wedge over the top of each one and roll up.  Serve at once.
