Name Honey Roasted Parsnips, Sweet Potatoes and Apples

List of Ingredients canola oil cooking spray

1 1/2 cups (about 1 medium) parsnip, peeled and cut into bite-sized chunks 

1 large sweet potato, peeled and cut into bite-sized chunks

1 large or 2 small firm red apples, cored and cut into bite-sized chunks

1 T. canola oil

1 T honey

2 T "lite" soy sauce

1/4 tsp ground ginger
Description Preheat oven to 400 degrees.  Spray casserole dish with cooking spray and set aside.  



In large microwave-safe bowl, mix oil and honey: warm in microwave for 10 to 20 seconds.  Mix in soy sauce and ginger.  Add parsnips, sweet potatoes and apples; stir to coat well.  Transfer to prepared casserole dish.  Cover and bake until tender; 45 minutes to 1 hour.
