Name Stuffing Muffins
Number of People 12
List of Ingredients 14 oz. bag herb-seasoned, cubed stuffing mix

3 small apples, finely chopped

1 medium onion, finely chopped

3 celery stalks, finely sliced

8 oz. turkey breakfast sausage

1 1/2 cups chicken broth

 2 T. butter

celery and carrots from cooking giblets
Description Melt butter, add sausage, celery and onion; cook until sausage is fully cooked.  Add broth, stuffing cubes and apples; mix well.  Stir in celery and carrots left from cooking giblets.



Spray muffin cups with cooking spray and pack each cut completely with stuffing mixture.  



Bake at 375 for 25 minutes.

Notes

Advance Preparation:  Prepare as above.  Remove from muffin cups and transfer to large covered container; cover and chill up to 24 hours.  To reheat, transfer stuffing servings to a baking pan; cover with foil.  Bake in a 400 degree oven for 15 to 20 minutes or until heated through.
