Wild Rice and Mushroom Pilaf

1 1/2 cup long grain and wild rice blend
3/4 cup dried cranberries
3 T extra-virgin olive oil
1 large onion, chopped
1 lb. mixed mushrooms, sliced
kosher salt and freshly ground black pepper
1/2 cup dry white wine
1/2 cup fresh flat-leaf parsley, chopped
2 T fresh tarragon, chopped
Description
Cook rice blend to package directions. Fold in cranberries, cover and let stand for 10 minutes.
Heat olive oil in large skillet over medium high heat. Add onion and cook until tender, about 5 to 7 minutes. Add mushrooms, 1/2 tsp. salt and 1/4 tsp. pepper; cook until tender, about 6 to 8 minutes. Add wine and simmer until evaporated, about 1 minute. Stir in parsley and tarragon; add mushrooms mix to rice and combine. Serve.

I used Uncle Ben's rice mix in a cooking pouch for the microwave and it worked wonderfully!
Absolutely delicious and very quick and easy.
