Name Grilled Mahi-Mahi with Escabeche Sauce
Number of People 4
List of Ingredients 1/2 medium red pepper, sliced thinly

1/2 medium green papper, sliced thinly

1/2 small red onion, sliced thinly

1 garlic clove, sliced thinly

6 pitted black olives, sliced

6 pitted green olives, sliced

1 1/2 T. capers

2 T brine from olives

1 T chopped, flat-leaf parsley

1/4 cup tomato juice

1 1/2 T sherry vinegar

1 1/2 T extra-virgin olive oil

4 (8 oz.) pieces mahi-mahi or similar fish

1/2 tsp. salt

1/2 tsp. freshly ground black pepper
Description Stir together first 12 ingredients in a bowl, and refrigerate until needed.



Season fish on both sides with salt and pepper.  Grill over medium-high heat 8 minutes on each side.  Serve fish hot, topped with cold or room temperature sauce.
