Name Red Pepper Chicken with Noodles

List of Ingredients 2 tsp. olive oil

3/4 lb. skinless, boneless chicken breasts, sliced very thin

1 tsp. dried basil leaves

1/2 tsp. dried rosemary leaves, crumbled

1/4 tsp. salt

1/4 tsp. freshly ground black pepper

4 scallions, sliced

1/4 cup white wine

1 cup chopped, roasted red peppers

3/4 cup canned red kidney beans, rinsed and drained

1/4 cup chicken broth

2 cups hot, cooked whole-wheat wide egg noodles

1/3 cup shredded part-skim mozzarella cheese
Description In a large nonstick skillet, heat the oil.  Add the chicken, then sprinkle with basil, rosemary, salt and pepper;  cook, stirring frequently, 4 to 5 minutes.  Stir in the scallions; cook until the chiken is lightly browned, 2 to 3 minutes longer.



Deglaze pan with white wine.  Stir in peppers,beans and chicken broth.  Reduce heat to low and simmer until sauce thickens slightly, about 4 to 5 minutes.  Add noodles; toss to combine.  Sprinkle with cheese just before serving.
