List of Ingredients 2 c. raw jicama, peeled and diced

1 green bell pepper, seeded and slivered

1/2 medium onion, chopped

1 c. cucumber, diced

1/4 c. olive oil

2 T white wine vinegar

1/2 tsp. crumbled dried oregano

salt and pepper, to taste
Description Combine jicama, green pepper, onion and cucumber.  Pour olive oil and vinegar over vegetables and mix lightly with oregano.  Add salt and pepper to taste.

Notes Very easy and very good.  If you want more heat you could add a jalapeno or when tomatoes are in season they might make a good addition as well.
