Name Quick and Easy Chicken Curry
Number of People 4
List of Ingredients 1 1/2 lbs. boneless, skinless chicken breasts; cut in bite-sized pieces

1 medium onion, finely chopped

2 cloves garlic, minced

1 small serrano chile, seeded and finely chopped

1/4 tsp. salt

1/2 tsp. ground cumin

1/4 tsp. ground coriander

1/4 tsp. ground turmeric

1 tsp. tomato paste

1 tsp. curry powder

4 oz. fat-free Half-n-Half

3 T olive oil

cilantro leaves for garnish
Description Heat a large skillet over medium heat.  Add olive oil and fry onions for about 1 minute.  Add the chicken pieces and continue cooking for 5 to 6 minutes, or until chicken is entirely white on the outside.



Add garlic and chile to the pan and stir to combine.  Cook, stirring often, until everything is golden brown; about 3 more minutes.



Add salt, turmeric, cumin and coriander; stir well.  Add tomato paste, curry powder and Half-n-Half; stir well to combine all flavors.



Serve immediately over cooked rice!

Notes I used a small jalapeno pepper instead of the serrano chile.  If you want it spicier, add a another or bigger pepper.
