Name Hummus

List of Ingredients 15 oz. can garbanzo beans (chickpeas), drained and rinsed, liquid reserved

1 tsp. cumin

1/2 tsp. salt

1 T. olive oil

1 T. lemon juice

1 clove garlic, crushed

1/4 cup Tahini
Description Drain and rinse beans, saving liquid.



Whisk together tahini and olive oil; set aside.



In blender or food processor, combine beans, cumin, salt, lemon juice and garlic.  Blend on low, slowly adding 1/4 cup reserved liquid.  Add tahini mixture and blend til desired consistency.



Serve with toasted pita chips, raw vegetables, whole grain crackers or tortilla crisps.

Notes Can be topped with roasted pine nuts and/or smoked paprika.



Can be made 1 or 2 days ahead and refrigerated.
