Name Vegetarian Chili

List of Ingredients 1 T. olive oil

2 cups chopped onion

3 garlic cloves

4 cups water, divided

1 to 2 T. sugar, to taste

1 to 2 T. chili powder, to taste

3 T. Worcestershire Sauce

1 medium green pepper, chopped

28 oz. can diced tomatoes, undrained

15 oz. can each chickpeas (aka garbanzo beans),  black beans, kidney beans, cannellini beans all rinsed and drained

6 oz. can tomato paste

reduced fat cheddar cheese or sour cream for garnish, optional
Description Heat oil in large Dutch oven over medium-high heat.  Add onion and garlic; saute 3 minutes or til tender.  Add 3 cups water and all ingredients through beans, stirring to combine.



Combine remaining cup of water and tomato paste in a bowl and whisk until blended.  Stir paste mixture into beans mixture.  Bring to a boil; reduce heat and simmer until very thick and rich.  Serve with cheese or sour cream, if desired.
