Name Black Bean Tacos

List of Ingredients 15 oz. can black beans, drained and rinsed

1/2 tsp ground cumin

5 tsp. olive oil

1 T. lime juice

2 cups coleslaw mix

2 green onions, chopped

1/3 cup cilantro, chopped

4 corn tortillas

1/2 cup feta cheese

bottled hot sauce, optional
Description Place beans and cumin in small bowl; may partially mash.



Mix  2 tsp. olive oil and lime juice in medium bowl; add coleslaw, green onions and cilantro; toss to coat and season to taste with salt and pepper.



Heat 3 tsp. olive oil in large nonstick skillet over medium-high heat.  Add tortillas in single layer.  Spoon 1/4 of bean mixture on each tortilla half; cook one minute.  Fold tacos in half and cook until golden brown, about one minute per side.



Fill tacos with feta and slaw.
