Name Bistro Lentils

List of Ingredients 3/4 cup green or brown lentils

2 tsp. olive oil

1 small onion, chopped

1 carrot, peeled and cut into small dice

3 cups low-sodium chicken broth

2 T. mirin(Japanese seasoning wine) or sweet vermouth or orange juice

1/2 tsp. salt
Description Pick over lentils to remove any small stones or broken lentils.



Heat oil in a large saucepan over medium heat.  Cook onion and carrot until soft, about 5 minutes.  Add broth, mirin (or vermouth or juice), salt and a grinding of pepper.  Bring the liquid to a boil and stir in the lentils.  Cover and cook until the lentils are tender, about 20 minutes.

Notes

Great served with Lemon Broiled Salmon.  A very heart healthy combination.
