1 lb. potaotes, peeled and diced
1 lb. leeks (or onions), diced
3 to 4 T. unsalted butter
salt and pepper
4 to 6 T heavy cream
2 to 4 T minced chives and parsley
sliced radishes for garnish
Description
Simmer the potatoes and leeks in salted water for 40 to 50 minutes, until soft.
Puree the vegetables with an immersion blender. Add the butter in bits; then salt and pepper to taste. Stir in cream.
Pour soup into bowls and sprinkle on chives, parsley and radishes.
