Name Pork Taco Carnitas Chili

List of Ingredients leftover meat from Slow Cooked Pork Taco Carnitas

Juice from 2 limes

1 yellow pepper, chopped

1 red pepper, chopped

1/2 cup chicken broth

pinch of crushed red pepper

1 T. minced garlic

28 oz. fire-roasted diced tomatoes, undrained

28 oz. fire-roasted crushed tomatoes, undrained

1 pkg. fajita seasoning

4 cans beans of choice, rinsed and drained

1/2 cup chopped fresh cilantro
Description Put leftover pork in pan and squeeze lime juice over meat.  Add chicken broth, and yellow and red peppers, crushed red pepper and garlic; simmer until peppers are tender.



Add tomatoes and fajita seasoning and simmer for 20 to 30 minutes.  Add beans and cilantro; heat through.



Can be served with extra lime wedges and/or sour cream.
