4 lbs potatoes, peeled and cut into bite-size cubes
5 cups chicken broth
DRESSING:
3 T Dijon mustard
1 T lemon juice
1/2 tsp sugar
1/2 cup olive oil
1/4 cup mayonnaise
1 tsp dry mustard
1/2 tsp celery seed
1-2 tsp salt (to taste)
1/2 - 1 tsp pepper
SALAD:
1 T dill relish
1/2 cup minced red onion
4 green onions, sliced
3/4 cup chopped celery
1 cup chopped bell pepper (red, green or both)
2 hard-boiled eggs, chopped
1/3 cup chopped green olives
1/3 cup chopped black olives
1/2 cup sweet relish
4 slices bacon, cooked and crumbled
Description
Bring chicken broth to a boil in a large pot. Add the potatoes and cook until just done, about 10 minutes. Drain and place in large bowl. In a separate bowl, whisk together the dressing ingredients. Add dressing to potatoes and gently toss to coat. Add remaining ingredients and gently stir to combine.
