Name Truffled Potato Gratin

List of Ingredients 2 cups heavy cream
4 cloves garlic, minced
1 medium shallot, minced
1 T chopped fresh thyme
1 1/4 tsp salt
1/2 tsp pepper
3 lbs russet potatoes
2 cups grated truffle cheese (such as Piccolo Truffle) or gouda
Description Heat oven to 350. In a small pot, combine first 6 ingredients (through pepper) and bring to a simmer. Cover and remove from heat.

Meanwhile, peel potatoes. Using a mandoline, cut into 1/16-inch-thick slices. Layer half the slices in a 13x9 baking dish. Scatter 1 cup cheese over top. Layer remaining potatoes, pour cream evenly over top and press with spatula to compress into dish. Scatter 1 cup cheese over top. Cover and bake 45-50 minutes until knife tender and bubbly. Then remove foil and bake until cheese browns (can also put under broiler for a few minutes, but watch carefully). Let stand 10 minutes before serving.
