Name Flatbread Pizzas with Olives, Feta and Artichokes

List of Ingredients 2 6-inch whole wheat pita breads, cut horizontally

6.5 oz. jar marinated artichoke hearts, drained, marinade reserved, large pieces halved

5 oz. sun-dried tomato & basil flavored feta cheese spread or 1 1/2 cups crumbled

14.5 oz. can diced tomatoes with Italian herbs, drained well

1 cup pitted Kalamata olives, coarsely chopped

2 tsp. dried oregano
Description Preheat oven to 450 degrees. Place breads on 2 baking sheets.  Brush breads with some of the artichoke marinade.  Bake just until beginning to color, about 3 minutes.  Cool on sheets for 5 minutes.



Spread breads almost to edges with feta spread or sprinkle with crumbled feta.  Top with tomatoes, olives, oregano and artichokes.  Drizzle with remaining artichoke marinade.



Bake pizzas until heated through, about 4 minutes.  Cut into wedges.

Notes Very, very tasty; be careful with marinade.  Don't want to make them soggy.
