Name Potato Pizzaiola

List of Ingredients 3 1/2 to 4 lbs. large red potatoes
3 T. olive oil
4 garlic cloves, minced
1 T. chopped fresh oregano or 1 tsp. dried oregano
1 14 oz. can Italian peeled tomatoes, drained and chopped
3/4 c. grated Parmesan cheese
1 1/2 tsp. salt
1/2 tsp. freshly ground pepper
1 small can tomato sauce
1 cup mozzarella cheese
Description Preheat oven to 350 degrees. Cook potatoes in a large saucepan of boiling salted water, for 10 minites only. Drain potatoes and remove skins. Cut potatoes into 1/2-inch slices.

Brush an 11 X 7 inch baking dish with 1 tsp. olive oil. Place one third layer of potatoes in baking dish, overlapping slightly. Season with 1/3 each of the garlic, oregano, tomatoes, remaining olive oil, Parmesan, salt, and pepper. Repeat layers twice, using remaining ingredients. Pour tomato sauce over all. Sprinkle with mozzarella cheese.

Bake 40 minutes, or until potatoes are tender when tested with a knife and lightly browned and bubbly.
