Name Lemon Grilled Trout

List of Ingredients 8 oz. whole, dressed rainbow trout

1 tsp. kosher salt

1/2 tsp. freshly ground black pepper

1 lemon, sliced

1 or 2 thyme sprigs
Description Prepare grill.  Open dressed trout as you would a book.  Sprinkle with salt and pepper evenly.  Arrange 3 to 4 slices of lemon and thyme sprig onto bottom half of fish; fold over to cover with top of fish.  Place on a grill rack coated with cooking spray; grill 2 minutes on each side or until fish flakes easily when tested with a fork for doneness.  Garnish with additional thyme sprigs, if desired.
