Name Chicken Azteca Tacos

List of Ingredients 1 pkg. flour tortillas
1/4 c. vegetable oil
2 c. chopped tomato
1 c. chopped onion
2 fresh jalapeno peppers, chopped with seeds
4 c. cooked chicken, shredded
1/2 tsp. each thyme and cumin
3/4 c. chicken broth
2 T. chopped fresh cilantro, optional
salt and pepper, to taste

Description Remove tortillas from refrigerator. Heat oil in large skillet, add tomatoes, onion and peppers. Heat for 3 minutes; stir in chicken, thyme, cumin & broth. Add salt and pepper to taste; simmer 15 minutes. Before serving stir in cilanto, if desired.

Heat tortillas according to package directions. Spread about 1 T. sour cream on each shell, fill with chicken mixture. Serve.

Notes Also makes a great dish for buffet. Fill tacos and place in a large baking dish which has been sprayed with cooking spray. Sprinkle with cheddar cheese and bake at 350 degrees until heated through and cheese is melted.
