Name Cucumber and Tomato Salad Caprese

List of Ingredients 1 large red tomato, sliced

1 large yellow tomato, sliced

1 medium cucumber, sliced

8 oz. fresh mozzarella cheese, sliced

2 T. extra-virgin olive oil

1 T. fresh lemon juice

1/8 tsp. salt

1/8 tsp. freshly ground black pepper

1/3 cup coarsely chopped fresh basil or lemon basil
Description On a large platter, arrange tomato, cucumber and mozzarella slices overlapping in a single layer.



In small bowl, combine oil, lemon juice, salt and pepper; mix well. 



Drizzle over salad and sprinkle with basil.
