Name Grilled Chicken with Roasted Red Pepper Sauce
Number of People 4
List of Ingredients 1 (7 oz.) bottle roasted red bell peppers, drained

2 tsp. olive oil

1 T. choppped fresh cilantro

1 tsp. fresh lime juice

1/2 tsp. salt, divided

4 (6oz.) skinless, boneless chicken breast halves

1/4 tsp. freshly ground black pepper

Description Prepare grill.



Place roasted red bell peppers and next 3 ingredients in a blender or food processor; process until smooth.  Stir in 1/4 tsp. salt, and set aside.



Sprinkle chicken evenly with remaining 1/4 tsp. salt and black pepper.  Place chicken on a grill rack coated with cooking spray over medium-hot heat.  Grill, covered, 5 to 6 minutes on each side or until done.



While chicken grills, place red bell pepper sauce in a small saucepan, and cook over medium heat until warm.  Serve with chicken.
