List of Ingredients 2 c. water

1 1/2 c. chicken stock

2 c. rice

1 c. chopped Italian parsley

1/2 c. chopped cilantro leaves

4 T minced garlic

1/4 c. freshly squeezed lime juice

2 T. extra-virgin olive oil

Kosher salt, to taste

2 tsp. freshly ground black pepper
Description

Cook water, chicken stock and rice until rice is al dente.



Combine all other ingredients in a bowl.  Toss together with cooked rice.



Can be served hot or cold.

Time 10 minutes prep and 20 minutes cooking
