Name Ham and Lentil Stew

List of Ingredients 3 cups diced ham
2 cups dried lentils (I used the whole bag)
2 cups each diced carrots and celery (Large chunks)
1 cup chopped onion
1 T minced garlic
4 cups water or chicken stock
2 cans chicken broth
1 tsp dried oregano
1/4 tsp each salt and pepper
1 bag (16 oz) frozen leaf spinach, NOT THAWED
2 T lemon juice
Description Put all ingredients except spinach and lemon juice into crock pot. Stir to combine.

Cover and cook on high 4-5 hours or on low 7-9 hours, or until lentils are tender

Stir in spinach, cover and cook 10 minutes or until tender. Stir in lemon juice.
