Quick Pickled Cabbage

1/2 small head red or green cabbage
1 cup water
1/2 cup apple cider vinegar
1/2 cup red wine vinegar
2 tsp. brown sugar
2 garlic cloves, smashed
2 dried bay leaves
2 tsp. caraway seeds (optional)
1 tsp. salt
freshly ground black pepper, to taste
Description
Make at least 4 hours before serving.
Shred cabbage finely with a mandolin slicer or sharp knife. Place in large glass bowl or jar.
Place water, vinegar and sugar in a bowl and whisk together until sugar is mostly dissolved. Stir in smashed garlic cloves, bay leaves, caraway seeds (if using), salt and good grind of black pepper. Pour over cabbage. Seal or tightly cover the jar/bowl and let sit on counter for 3 to 4 hours. Stir, then seal and place in refrigerator until chilled (at least 1 hour).
