Name Brat and Pepper Tacos

List of Ingredients 1 lb. fresh bratwurst, sliced into 1/2" pieces
3 poblano peppers, seeded and sliced
1 small jalapeno pepper, seeded and finely chopped
1 red bell pepper, seeded and sliced
3 T. EVOO
kosher salt and freshly ground black pepper
1/2 cup sour cream
1/4 cup whole-grain mustard
1 - 2 tsp. horseradish
12 corn tortillas, warmed
quick pickled red cabbage
Description Preheat oven to 425 degrees. On a large rimmed baking sheet, toss the bratwurst with peppers and olive oil and season with salt and pepper. Roast for about 20 minutes, until sausage is browned and peppers are tender.

Meanwhile, in a small bowl, mix the sour cream with the mustard and horseradish. Spread the mustard cream on the tortillas and fill with the bratwurst and peppers. Top with pickled cabbage.
