Name Skillet Chicken Fajitas

List of Ingredients For Fajitas:
1 lb. boneless, skinless chicken breasts, sliced thinly
2 T fresh cilantro or parsley
2 tsp. extra virgin olive oil
1 tsp. dried oregano
1/2 tsp. hot sauce (optional)
1/2 tsp. chili powder
1/2 tsp kosher salt
1/4 tsp. garlic powder
1/4 tsp. ground cumin
juice of half a lime

For Peppers and Onions:
2 tsp. extra virgin olive oil
1 each red and yellow bell peppers, thinly sliced
1/2 yellow onion, thinly sliced
1 tsp. chili powder
1/2 tsp. kosher salt
Description In large bowl, combine all fajitas ingredients except lime juice. Toss until chicken is coated, cover and refrigerate for 15 to 30 minutes.

Preheat a 12-inch cast iron skillet over high heat with 2 tsp. oil. When skillet is hot, add sliced peppers, onion, chili powder and 1/2 tsp. of salt. Saute for about 4 minutes or until golden and softened slightly. Remove peppers and onions from skillet and set aside.

Add another 2 tsp. oil to hot skillet. Add in chicken fajita mixture and saute until chicken is cooked through and no longer pink. Add back peppers and onions along with lime juice. Cook all for another minute and serve.

Can be served in lettuce cups or tortillas and top with pico de gallo.
