List of Ingredients 2 T. flour
1/4 tsp each salt and pepper
4 (3/4\\" thick) pieces cod fillet (6 oz. each)
1 1/2 T. olive oil (prefer extra-virgin)
1 medium onion, thinly sliced
1 tsp. minced garlic
14.5 oz can diced tomatoes with green chiles
1/2 cup water
1/3 cup pimiento-stuffed green olives, sliced
1 T. capers, rinsed
1/2 tsp. dried oregano
Garnish: parsley, optional
Description Mix flour, salt and pepper on sheet of wax paper; add fish and turn to coat.

Heat 1 T. oil in a large nonstick skillet. Add cod and cook over medium-high heat, turning once, for 5 to 7 minutes until golden and just cooked through. Remove to a platter; cover to keep warm.

Heat remaining 1/2 T. oil in skillet. Add onion and saute over medium-high heat 3 minutes, or until fragrant. Stir in remaining ingredients, bring to a boil, reduce heat and simmer 2 minutes to develop flavors. Spoon over fish.
