Name Three Bean Salad
Number of People 8
List of Ingredients 1/2 lb green beans (called for fresh, I used frozen)

1 rounded tsp Dijon mustard

2 tsp sugar

3 T red wine vinegar

1/2 cup olive oil

1 large finely chopped shallot

1 15 oz can red kidney beans, rinsed and drained

1 15 oz can garbanzo beans, rinsed and drained

1/4 cup fresh parsley, chopped

salt and pepper
Description Combine mustard, shallot, sugar and vinegar. Whisk in oil. Add all three beans and parsley to bowl and toss to coat bean salad with dressing. Season with salt and pepper, to taste, and serve.
