Horseradish Mashed Potatoes

2 lbs peeled baking potatoes, quartered 2 T butter 1/2 c fat-free milk 1/4 cup sour cream (reduced fat) 1/4 cup finely chopped green onions (may substitute fresh parsley for milder flavor) 2 T prepared horseradish 1/2 tsp salt 1/2 tsp pepper

Cover potatoes with water in large saucepan. Bring to a boil; simmer 20 minutes or until potatoes are done (I just boiled them until they were done; it's faster). Drain. REturn potatoes to pan. Add butter, beat with a mixer at medium speed until smooth. Stir in remaining ingredients and keep warm.
