Deli Chicken Pesto Panini Sandwich

1/2 cup mayonnaise
1/4 cup prepared pesto
2 T. sun-dried tomatoes, in oil, finely chopped
8 slices Italian Bread
1 cup spinach leaves
8 slices tomato (optional)
1/2 lb. thinly sliced garlic herb chicken or turkey
4 slices (about 1/4 lb.) provolene cheese
1/2 cup thinly sliced red onion

Description
Prheat covered countertop grill, if using.
Stir together mayonnaise, pesto and sun-dried tomatoes.
Spread all slices of bread with 1 T. mayonnaise mixture. Top half of the slices with 1/4 of the spinach, tomato, chicken or turkey, cheese and red onion. Top with remaining slices of bread.
Coat outside of sandwich with cooking spreay. Heat in countertop grill 3-1/2 minutes or until bread is golden and cheese has melted. OR, grill in preheated medium skillet over medium heat, turning over after first side has browned.
Repeat with remaining ingredients.
