Asparagus Beef Stir Fry

List of Ingredients
2 T vegetable oil
2 whole cloves garlic
1 lb asparagus, cut into 2 1/2 inch slices
2 small onions, sliced thin
1 small-medium red pepper, cut julienne
1 large carrot, 2 1/2 inch slices
2 1/2 c cooked roast beef, 2 1/2 inch slices
2 T cornstarch
1 c beef broth
3 T soy sauce
1/2 tsp sugar
salted cashews
cooked rice
Description
In large skillet, heat oil and add garlic. Cook and stir for 2 minutes, or until garlic is light brown. Remove garlic and discard.
In same skillet, stir fry asparagus, onions, pepper, carrots for 15-20 minutes, or until crisp-tender (you may want to sprinkle the veggies with salt, LIGHTLY).
Stir together beef broth and cornstarch until thoroughly combined. Add soy sauce and sugar. Set aside.
To veggies, add beef and heat through. Stir the sauce again and add to pan. Bring to a boil and cook for 2 minutes, stirring constantly.
Serve over rice and sprinkle with cashews.

Notes
I bought a 1 1/2 lb. top cut beef loin roast and cooked in in the crock pot with 1 1/2 cups water and 1 1/2 tsp beef base. Then I used the liquid from the crock pot as the beef broth. Worked really well.
Also, do NOT use everything salt-free. It doesn\\'t taste very good when you do that. But it\\'s delicious otherwise!
