Name Salmon Fillets with Hoisin Glaze

List of Ingredients 1/4 cup hoisin sauce
2 T. dry sherry
1 scallion, chopped white and green parts kep separate
2 T. grated fresh ginger
1/2 clove garlic, pressed
4 6-oz. salmon fillets, with skin
Description Place an oiled broiler rack 6 inches from heat source; preheat broiler.

Mix hoisin sauce, dry sherry, white part of scallion, fresh ginger, and garlic; set aside.

Arrange salmon, skin side down, on broiler rack and broil 3 to 5 minutes. Spoon on hoisin glaze and broil until glaze is bubbling and the salmon is cooked, about 10 more minutes for medium rare; 12 more minutes for medium. Transfer salmon to serving plates; sprinkle with scallion greens.
