Shrimp in Coconut Sauce

1 1/2 lbs. large shrimp, peeled and deveined
Goya Adobo Seasoning with Pepper
1 T. olive oil
2 cups chopped onion
3 scallions, sliced very thin, both white and green
1 1/2 tsp. minced garlic or 3 cloves fresh, minced
1/2 cup tomato sauce
1 packet Sazon Goya without Annatto
1 cup clam broth or juice
1 can Goya coconut milk
4 cups hot cooked rice
Description
Season shrimp with Adobo and set aside. In a skillet, heat oil on medium. Stir in onion, scallion and garlic. Cook, stirring often until onion is translucent, about 10 minutes. Stir in tomato sauce and cook 5 minutes. Stir in Sazon, clam broth and coconut milk, bring to boil, lower heat and simmer for 5 minutes until sauce thickens. Add shrimp and cook, turning once, until shrimp are just cooked through, about 5 minutes. Transfer to serving platter, garnish with scallion. Serve accompanied by rice.
