3/4 cup plus 2 T. cake flour
1 T. baking powder
1/8 tsp. salt
1 T. powdered instant coffee
1 T. boiling water
1 tsp. vanilla extract
7 oz. unsweetened chocolate, coarsely chopped
6 oz. bittersweet chocolate, coarsely chopped
8 T. unsalted butter
7 large eggs
2 3/4 cups sugar
2 cups chopped walnuts
1 1/2 cups bittersweet chocolate chips
Description
Preheat oven to 350 degrees. Lightly spray cookie sheets with cooking spray or line with parchment paper.
Sift together flour, baking powder and salt into a bowl and set aside. Combine instant coffee and boiling water to make a paste. Blend in vanilla extract.
Melt chopped unsweetened chocolate, chopped bittersweet chocolate and butter in a saucepan over low heat or in microwave at 15 to 20 second intervals. Gently stir to blend.
In a stand mixer fitted with a whisk attachment, beat together eggs, sugar and coffee paste mixture on high speed until light in texture and thick, about 6 to 8 minutes. Add chocolate mixture with machine running on medium speed. On low speed, mix in dry ingredients until just blended. Mix in walnuts and chocolate chips until blended. Scrape down bowl as needed during mixing to blend evenly.
Using a 1/4 cup measure as a scoop, fill it with dough, level it and drop the dough onto a prepared cookie sheet, leaving 3 to 4 inches between cookies. In batches, bake until cookies are cracked on top but still slightly moist, rotating pans as necessary to bake evenly, about 14 minutes. Allow cookies to cool slightly on cookie sheet before transferring to wire racks to cool completely.

Notes
I used dark chocolate chips (couldn\\'t find bittersweet).
I also only used 2 T. dough, cookies were too large (baked about 12 minutes instead).
Be sure to chop chocolate to help speed melting process and prevent scorching.
Rotate cookies from top to bottom rack about halfway through baking time. DON\\'T OVERBAKE! They should appear moist when removed from the oven and will firm up once removed.
Warning! Each extra large cookie contains 350 calories, so half of that is 175 calories each!! OUCH! but yummy.
