12 oz. skinless, boneless chicken breasts
1/2 c. sliced green onion
2 cloves minced garlic
2 T. rice wine vinegar or white wine vinegar
2 T. reduced-sodium soy sauce
1 T. olive oil
1/2 tsp. crushed red pepper or 1/4 tsp. ground red pepper
1/4 tsp. black pepper
1 T. olive oil
1 T. corn starch
12-inch Italian pizza crust (like Boboli)
1/2 c. shredded Monterey Jack cheese
2 T. pine nuts or sliced almonds
1/2 c. shredded mozzarella cheese
Description
Cut chicken into 1/2-inch pieces. In a large bowl combine half of the green onion, the minced garlic, vinegar, soy sauce, 1 T. oil, red pepper, and black pepper. Add the chicken pieces, stir to coat. Cover and let stand 30 minutes at room temperature or for 1 hour in refrigerator. Drain; reserving marinade.
Heat remaining oil in a large skillet; add chicken pieces. Cook and stir about 3 minutes or until no longer pink. Stir cornstarch into reserved marinade; add to skillet. Cook and stir until thickened and bubbly.
Spoon meat mixture evenly atop crust. Sprinkle with Monterey Jack and mozzarella cheeses. Bake, uncovered, in a 400 degree oven for 12 minutes. Top with remaining green onion and nuts. Return to oven for 2 minutes more.
