Lemon and Parmesan Crusted Salmon

4 serving-size salmon filets
2 T. butter or margarine, melted
1/4 tsp. salt
3/4 c. fresh bread crumbs, about 2 slices
1/4 c. grated Parmesan cheese
2 T. thinly sliced green onions
2 tsp. grated lemon peel
1/4 tsp. dried thyme leaves
Description
Heat oven to 375 degrees. Spray shallow baking pan with cooking spray. Pat salmon dry with paper towel. Place salmon, skin side down in pan; brush with 1 T. of butter. Sprinkle with salt.
Mix bread crumbs, cheese, onions, lemon peel and thyme in small bowl. Stir in remaining 1 T. butter. Press bread crumb mixture evenly on salmon.
Bake, uncovered for 15 to 25 minutes or until salmon flakes easily with fork. Serve immediately.

Notes
The recipe suggests a bread with medium texture instead of a soft texture. I used a whole wheat bread and it worked very well.
It is best to serve the fish as soon as it comes out of the oven.
I also omitted the salt and it was just fine.
