Name Teriyaki Chicken and Vegetables
Number of People 4
List of Ingredients 4 boneless, skinless chicken breasts
3 T. vegetable oil
16 oz. frozen broccoli or broccoli stir-fry combo
1/2 c. water
15 oz. can baby corn or straw mushrooms, drained
2/3 c. bottled, thick teriyaki sauce
1/2 c. cashews or peanuts
Sesame seeds
Cooked rice
Description Cut chicken into large strips.

Heat oil in skillet over high until hot, but not smoking. Stir-fry broccoli 2 minutes or until crisp-tender. Transfer to bowl.

Add chicken and water to skillet. Cover; cook over medium heat 8 minutes or until chicken is done.

Return broccoli to pan along with corn, teriyaki sauce and nuts. Stir-fry over high heat 2 minutes or until heated through.

Sprinkle with sesame seeds and serve over hot rice.

Notes May be rather salty, so if nuts are salted, might want to rinse them a bit. Probably depends on brand of teriyaki sauce.

Recipe says 4 servings, but it seemed more like 6 servings.
