Chicken, Provolone and Swiss Roulades

4 boneless, skinless chicken breasts (about 5 to 6 oz. each)
4 thin slices prosciutto
4 thin slices provolone cheese (if not very thin, use 1/2 slice)
4 thin slices Swiss cheese (if not very thin, use 1/2 slice)
2 T. plus one tsp. butter or margarine
1 tsp. dried tarragon leaves
1/2 tsp. white pepper
Description
Preheat oven to 350 degrees.
Pound chicken breasts between two sheets of waxed paper until they nearly double in size and are fairly thin. Place one slice prosciutto on top of ach chicken breasts. Top prosciutto with one slice provolone cheese and one slice Swiss cheese. Roll up each chicken breast starting at short end and secure with toothpicks.
Melt 2 T. butter in large non-stick skillet over medium heat. Saute rolled chicken breasts over medium-high heat for 2 to 3 minutes, turning frequently. Remove from skillet. Sprinkle sateed chicken breasts with tarragon and pepper.
