Name Tomato Chicken Pasta

List of Ingredients 9 oz. fettuccine
1/4 boiling water
1/4 c. tomato sprinkles or 3 to 5 oz. sun-dried tomatoes (not in oil)
2 tsp. olive oil
cooking spray
1/2 c. finely chopped shallots
1 lb. chicken breast tenders, cut into 1-inch pieces
1/2 c. dry white wine
1/3 c. whipping cream
1/2 c. chopped fresh basil, divided
1/4 c. shredded Parmesan cheese
1/2 tsp. salt
1/4 tsp. black pepper
Description Cook pasta according to package directions, omitting salt and fat.

While pasta cooks, combine water and tomato in a small bowl; let stand 5 minutes. Drain.

While tomato soaks, heat oil in a large skillet coated with cooking spray over medium-high heat. Add shallots and chicken, and saute 5 minutes. Reduce heat to medium; stir in wine and cream. Cook 3 minutes, stirring occasionally.

Combine pasta, tomato, chicken mixture, 1/4 c. basil, cheese and salt, tossing to coat. Sprinkle with 1/4 c. basil and pepper.
