Basic Blintzes

List of Ingredients
3 eggs
1 1/4 c. milk
2 T. melted butter
1 c. flour
1/2 tsp. salt
3 T. butter
1 T. salad oil
Description
Place ingredients in blender container in the order listed. Cover and blend at high speed 20 to 30 seconds. Scrape down sides of container. Blend a few more seconds.
Cook blintzes in a 7 to 8 inch crepe pan (larger blintzes are easier to fill and roll). See directions for cooking Classic Crepes.

When ready to serve, heat butter and oil in a large skillet. Saute the rolled blintzes approximately 2 to 3 minutes on each side until they are golden brown. Drain on paper toweling. Serve hot.
Makes 12 to 14 large blintzes.
