Name Tuna Blintzes

List of Ingredients 6 Basic Blintzes
6 green onions, thinly sliced
1 T. butter
6 oz. can tuna, drained
1/4 tsp. celery salt
pepper
1/2 c. (2 oz.) cheddar cheese, grated
1 egg
3 T. butter
1 T. salad oil
Description Make Basic Blintzes as directed and set aside.

Saute green onions in butter until soft. Stir in tuna, celery salt, pepper, cheese and egg. Cook 2 to 3 minutes.

Fill and wrap blintzes as follows. Place filling about 1-1/2\\" from edge of blintz nearest you. Fold that edge over filling, then fold in both sides. Fold up bottom to top until it resembles a pocket.

When ready to serve, heat butter and oil in large skillet. Fry rolled blintzes 2 to 3 minutes on each side until golden brown. Drain on paper toweling and serve hot.

Notes I have used leftover Classic Crepes. They work just as well but are a little smaller, so you might get 8 instead of 6.
