Name Spanish Pork Chops with Rice

List of Ingredients 1 c. rice
4 pork chops
1 onion, sliced
2 c. tomato juice
2 T. parsley, minced
2 T. celery, chopped
Description Boil rice in salted water for 10 minutes; drain.

Meanwhile, brown pork chops in frying pan. Remove chops and place in baking dish. In same frying pan, brown celery and onion. When tender, place in small mounds on top of chops. Put a mound of rice on top of celery and onions. Pour tomato juice around the chops and on top. Scatter parsley over all and bake at 350 degrees for 1 hour.
