Name Chicken Stuffed Potato Shells

List of Ingredients 1 broiler-fryer chicken
1 1/4 tsp. salt, divided
3/8 tsp pepper, divided
4 medium baking potatoes, baked
1 c. Parmesan cheese, grated
1/2 c. sour cream
1/2 c. mayonnaise
2 T. finely chopped onion
1 T. bread crumbs
Description In deep pan, place chicken. Sprinkle with 1 tsp. salt and 1/4 tsp. pepper. Add water to cover. Cover and simmer an hour or until fork tender. Cool. Separate meat from bones, discarding bones and skin. Dice meat and set aside.

Halve potatoes lengthwise, scoop out centers (leave a bit of potato on shell) and set potato pulp aside for another use.

In bowl, make stuffing by mixing together chicken, cheese, sour cream, mayonnaise, onion, remaining 1/4 tsp. salt and remaining 1/8 tsp. pepper. Pile chicken mixture into shells; sprinkle with crumbs and bake, uncovered, in 350 degree oven for 30 minutes or until crumbs brown lightly.

Notes I use leftover potato to make a casserole. Mix with margarine, sour cream and milk and bake with potato shells.
Serve on the side with shells.
