Name Lemon Egg Soup

List of Ingredients 21 oz. chicken broth
1/2 c. rice
8 oz. cream cheese, softened
2 eggs
4 T. lemon juice
1/2 tsp. grated lemon rind
Description Bring broth to boil; add rice. Cover and simmer 20 minutes. Remove from heat.

Combine softened cream cheese, eggs and lemon juice, mixing until well blended. Gradually add to broth; stir constantly until smooth. Stir in lemon rind; heat thoroughly.

Notes Might need additional can of broth or a cup or so of bouillon.
