Name New England Clam Chowder

List of Ingredients 1/4 lb. bacon, minced
4 c. diced potatoes
1/2 c. onion, chopped
2 c. milk
3 T. flour
1 T. parsley
1 c. Half \\'n\\' Half
14 oz. canned, minced clams (reserve liquid)
Description Fry bacon until crisp; remove bits and reserve.

Saute onion in bacon grease. Add all clam liquor, 1 1/2 c. water and diced potatoes to sauteed onions and grease. Cover and cook 15 to 20 minutes. Add clams, 1 3/4 c. milk and cream.

Blend 1/4 c. milk and flour; stir into chowder. Heat to boil; stir occasionally. Season with salt and pepper as desired. Add parsley.

Garnish with bacon bits to serve.
