Name Orange-Spiced Sweet Potatoes

List of Ingredients 2 pounds sweet potatoes, diced
1/2 cup packed dark brown sugar
1/2 cup (1 stick) butter, cubed
1 tsp. ground cinnamon
1 tsp. vanilla
1/2 tsp. salt
1/2 tsp. ground nutmeg
1/2 tsp. grated orange peel
Juice of 1 medium orange
Chopped toasted pecans
Description To toast pecans, spread in single layer in small, heavy skillet. Cook and stir over medium heat 1 to 2 minutes or until nuts are lightly browned.

Combine potatoes, brown sugar, butter, cinnamon, vanilla, salt, nutmeg, orange peel and juice in a crock-pot; stir to blend. Cover; cook on low 4 hours or on high 2hours. Sprinkle with pecans.

Variation: For creamier potatoes, add 1/4 cup milk or whipping cream and beat with electric mixer at medium speed until smooth. Sprinkle with the pecans.
