Chicken a la Palomilla with Green Beans

4 (1/4 lb) boneless skinless chicken breasts
2 garlic cloves, minced
1 tsp orange zest
1/2 tsp dry thyme
3/4 tsp salt
1/2 cup pale ale or other beer
1 1/2 tsp olive oil
1 red onion, chopped
2 cups frozen green beans, thawed
2 tsp red wine vinegar
Description
Pound chicken between wax paper until 1/4 inch thick
Combine garlic, zest, thyme, and 1/4 tsp salt in small bowl. Measure out 1 1/2 tsp of mixture and use hands to rub it all over the chicken. Transfer chicken to zip-top bag and refrigerate for 20-30 minutes. Add remaining garlic mixture to beer and set aside.
Heat 3/4 tsp oil in large nonstick skillet over medium heat. Add chicken and cook until browned and no longer pink, about 3 minutes on each side. Transfer chicken to a platter and cover with foil.
Add remaining 3/4 tsp oil to same skillet and return it to medium heat. Add onion and cook, stirring 1 minute. Add beans and beer mixture; simmer until vegetables are tender and liquid reduced, about 5 minutes. Stir in vinegar and remaining 1/2 tsp salt and pour over chicken.
