Perfect Spanish Rice

1 c. white rice
1 c. corn oil
1/4 c. diced onion
1 clove garlic
2 c. crushed tomatoes
2 c. chicken broth
Description
In skillet on medium to low heat, brown rice in oil until it turns golden brown. Drain rice from oil and place in 2-quart casserole. Add onions and garlic and microwave few minutes or til onion is clear.
Add tomatoes and broth. Microwave until rice is done.
